In this setting, the bearer of the title is female, and it is customary to use the feminine form of the title's name. Therefore, she is known as Archangel Gabrielle.

Just as titles may change hands while retaining their significance, the title of Gabriel remains the same in meaning and purpose, even if its current bearer is a woman.
